Breakfast Cookies


I call these breakfast cookies as they are not too sweet and they are chocked full of goodness...oats, nuts, seeds and even coconut if you so choose.

1 C Butter
1/2 C White Sugar
3/4 C Brown Sugar
2 Eggs
1 tsp Vanilla
1 tsp Baking Soda
1 3/4 C Flour (I've experimented with Spelt and Whole Wheat flours with good results...just add a little more)
2 C Quick Rolled Oats
1 C chopped Nuts and Seeds (I like a combination of walnuts, almonds and sunflower seeds)
1 C Pure Chocolate Chips

Cream butter and sugar together until smooth. Add eggs and vanilla, beat. Mix in baking soda and flour. Stir in oats, nuts, seeds and chocolate chips. Spoon onto a lightly greased cookie sheet and back at 350 degrees for 10 minutes.

With them outlawing candy at school/work, I suppose I'd better stop bringing fudge in for the staff for breakfast. I'll have to give these cookies a try as a healthy alternative this week.
You wouldn't believe how many have been hooked on the chai recipe.

Fool, I hope you enjoy them. They are a favorite around here. Glad the chai recipe has been such a hit.

Cheryl, I figure people eat muffins (which these days seems to be not much more than cake),so cookies is not much of a stretch. And there is certainly a lot less sugar in these than many cereals on the market. I don't eat them every day, but I certainly don't feel guilty when I do. ;)
